Ingredients:
- 2 lbs (about 1 kg) potatoes, peeled and cut into chunks
- 4 cloves garlic, peeled
- 1/2 cup (120 ml) mascarpone cheese
- 1/4 cup (60 ml) unsalted butter
- 1/4 cup (60 ml) milk or cream (adjust for desired consistency)
- 2 tbsp fresh parsley, finely chopped
- 1 tbsp fresh chives, finely chopped
- Salt and black pepper to taste
Boil Potatoes and Garlic:
- Place the potato chunks and garlic cloves in a large pot.
- Cover with cold water and add a pinch of salt.
- Bring to a boil over high heat, then reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
