Family Potluck: Garlic and Herb Mascarpone Mashed Potatoes

Transform your traditional mashed potatoes into a gourmet delight with this Garlic and Herb Mascarpone Mashed Potatoes recipe. The rich, creamy mascarpone cheese, combined with fresh herbs and garlic, creates a luxurious side dish perfect for any meal.
  
Ingredients:
  • 2 lbs (about 1 kg) potatoes, peeled and cut into chunks
  • 4 cloves garlic, peeled
  • 1/2 cup (120 ml) mascarpone cheese
  • 1/4 cup (60 ml) unsalted butter
  • 1/4 cup (60 ml) milk or cream (adjust for desired consistency)
  • 2 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • Salt and black pepper to taste
Instructions:

Boil Potatoes and Garlic:

  1. Place the potato chunks and garlic cloves in a large pot.
  2. Cover with cold water and add a pinch of salt.
  3. Bring to a boil over high heat, then reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
Prepare Mashed Potatoes:

  1. Drain the potatoes and garlic well and return them to the pot.
  2. Add the mascarpone cheese, butter, and milk or cream.
Mash and Mix:

  1. Use a potato masher or an electric mixer to mash the potatoes until smooth and creamy.
  2. Stir in the chopped parsley and chives.
  3. Season with salt and black pepper to taste.
Serve:

  1. Transfer the mashed potatoes to a serving bowl.
  2. Garnish with a bit more fresh herbs if desired.
